Gluten Free Brekkie

Gluten free really doesn’t have to be difficult.

Nor does it need to be from processed foods.

When my clients find out they can't eat gluten (see scan below) they often look horrified. 'You mean no bread, cereal OR PASTA?!'

Yeeerrssss I say, it's really just a matter of knowing what substitutes there are... and this is one of my favourites. A simple classic, that’s so easy and good for you.

METHOD

Scrub potato skins and dice.

Fill a pot with a few inches of water, bring to the boil and steam diced potatoes until almost soft (you can do this day before and or freeze for quickness).

Then heat frying pan with your chosen oil, add diced potatoes. Good shake of garlic and onion powder, cayenne pepper and season with snp to taste. Fry on high heat until golden.

When the potatoes are nearly done, add the frozen Spinach (or fresh whichever you have to hand) and let thaw or wilt, but don’t overcook.

Add the eggs, heat on low until eggs are done to your liking and devour - yum!

INGREDIENTS

(for 2 people)

- 2 medium Potatoes

- 4 Eggs

- 4 blocks of Spinach

- 1/4 teaspoon of Paprika

- 1/4 teaspoon of Garlic powder

- 1/4 teaspoon of Onion powder

Constipation can cause a myriad of issues, IBS, malabsorption, not to mention mental toxins resulting in brain fog and fatigue. A chronically backed up digestive system is a harbouring ground for diseases, parasites and bacteria.
