Keto Pancakes

What a delicious Sunday morning treat, thanks to my hubby (credit prompt by him!😂). These delicious pancakes are gluten and dairy free. Clean and packed with nutrients.

Keto Pancakes

INGREDIENTS 
- 1/2 cup of almond flour
- 1 teaspoon of baking powder
- 1/2 teaspoon of cinnamon
- 1 overripe banana (ideally skin has brown spots)
- 1 egg (if you don’t have baking powder, use 2 eggs)
- 1/2 cup of dairy free unsweetened milk

TOPPINGS
- Coconut yogurt
- Strawberries or berries (for a a boost of vitamin c)
- Mint leaves

METHOD
Mix all dry ingredients in one bowl, then mix coconut milk and eggs in another bowl, then slowly pour & stir into the dry mix until smooth, mash the banana, then add to the rest. Coconut oil (or your oil of choice) for cooking and dessert sized spoonful of mix into frying pan on a low to medium heat. When you see bubbles on top of the pancakes you can flip them over (don’t try and move them before). Then about 30 seconds on the reverse side and pop onto a drying rack or plate. Add your desired fruit, yogurt and mint leaves and enjoy! You can up the quantities and batch cook as these are great in the fridge too.
