Speedy Berry Smoothie

This recipe is so quick, nutritious and delicious! Use it as a meal replacement or a snack, the banana makes it nice and filling.

We love it and often use frozen berries (if fresh are out of season) particularly as they don’t loose their nutritional value despite being frozen.

It’s packed with antioxidants and will give you a big boost of vitamin C. Aiding your immune system protecting you against those winter bugs.

Speedy Berry Smoothie

Prep time: 5 mins Total time: 30 mins Portions: 2 Ingredients: 6

INGREDIENTS

1 1/2 cups of milk; Almond, Coconut, or Cows. You can also just use apple juice.

1 banana roughly chopped.

1 1/2 cups frozen mixed berries.

3/4 cup Greek yogurt dairy or non dairy (whichever suits you) preferably unsweetened.

If the berries are a bit sharp, you can add a date or two, but avoid if possible! As dried fruits can also spike your insulin levels.

Handful of mint leaves for a good zing (optional).

1 tablespoon of wheatgrass to boost your iron & magnesium levels (optional).

DIRECTIONS

Place the milk or apple juice, chopped banana, berries and yogurt in a blender; blend until smooth. If the smoothie seems too thick, add a little more liquid. 

Pour into two glasses and garnish with fresh berries and mint leaves.

NUTRITION

The berries in this smoothie will provide you with plenty of fibre, vitamin C, K, manganese and antioxidants called polyphenols and ellagitannins, which are great at reducing oxidative stress. The banana will also give you vitamin C, and vitamin B6, potassium, fibre, magnesium and small amount of carbohydrates. * Depending on your selection of berries.
