Curried Roasted Cauliflower

Some people have a hard time digesting cruciferous vegetables, as these plants release sulphur-containing organic compounds, called glucosinolates which can cause gas and bloating.

QUICK FIX - Often a shot of apple cider vinegar (with the mother, so it’s fermented) can help with the excess gas before eating as this increases your stomach acid easing digesting.

Cauliflower is very high in nutrients. An excellent source of vitamin C, folate, and vitamin K. High in antioxidants and rich in fibre, making it a great substitute for a low carb, or gluten free diet.

Curried Roasted Cauliflower

INGREDIENTS

1 medium head cauliflower, cut into small florets

1 red onion, sliced length ways

4 whole garlic cloves, skin on

2 tsp grated fresh or jarred ginger

2 tbsp olive oil

2 tsp garam masala or good-quality curry powder, or to taste

1/2 tsp ground cumin

1/2 tsp turmeric

1/2 tsp mustard powder

5 baby tomatoes, halved

1/2 cup frozen green peas

1/4 cup minced fresh parsley, or coriander (optional)

Season to taste

DIRECTIONS

Preheat oven to 230 ºC and line a rimmed baking tray with parchment paper.

Trim the head of cauliflower, discarding the core and thick stems; cut florets into pieces about the size of ping-pong balls.

Chop the onion into strips. Keep the garlic cloves in their shells.

In a large bowl, combine the olive oil, salt, cauliflower pieces, onion, garlic, ginger and spices and mix well.

Line a baking sheet with parchment and spread the cauliflower mix on the sheet.

Sprinkle with salt and pepper.

Roast cauliflower in the oven for 50 mins, or until each piece is golden brown. You may need to turn them a couple of times, until each piece has turned golden brown. The browner the cauliflower, the more caramelisation and the sweeter they'll be - yum!

20 mins in, you may need to add some more oil if it looks a bit dry.

40 mins in, add the baby tomatoes and peas.

Serve with fresh parsley or coriander.

IDEAS TO SERVE WITH

If you want to up grade this into a main meal, try adding with a chicken or tofu curry. We like 8 oz extra-firm tofu, sliced, blotted, and cut into small cubes. Coat in almond flour and fry off in some oil until golden brown.
